* 1 lb beef
* 6 pieces candle nut
* 5 cm of ginger
* 5 pieces of shallots
* 3 pieces of garlic
* salt, pepper
* soy sauce

Indonesian Food Recipe Instructions :
Slice beef thinly
Peel shallots and garlic, slice thinly
Slice ginger and grind candle nut
Brown shallots, garlic, ginger, and candle nut
Put in beef and mix them evenly
Add salt and pepper
Add 2-3 cups of water so beef will cook evenly

* 1 chicken
* 250 gr of bread flour
* 40 gr of sagu
* 80 gr of onion
* 8 pieces of shallots
* 1 egg
* salt and pepper

Indonesian Food Recipes INSTRUCTIONS
Remove bones from the chicken, cut very thinly
Cut onion into very small pieces
Grind shallots
Evenly mix all the above with bread flour
Add salt and pepper
Make mix into small discs about 2-2.5 inch in diameter
Heat oil in a pan
Put each disc and fry until dark golden.

* 5 pieces of garlic
* 3 oz.flour
* 1 piece of egg
* 2 spoons of tomato sauce
* 1 lime
* 1/2 tsp of sugar, salt and pepper.

Indonesian Food Recipes Instructions :
Clean the shrimps, remove the heads, keep the tails Clean garlic, and slice thinly. Sprinkle over the shrimps. Make a mix of the flour, egg, with enough water, salt, and pepper. Heat oil in a pan.
One by one, put the shrimps into the pan by first dipping it in the mix. Fry until golden. Put on a plate, pour tomato sauce over them.
Tomato sauce: Heat tomato sauce, add sugar, and lime juice.

* 100 gr lengjuas

Cut chicken into pieces
Grind shallots, garlic, candle nut, corriander, and jintan
Brown for a little bit.
Boil chicken with 2 cups of coconut milk, put in sereh and galanga.
When chicken is about done, put in more coconut milk along with the spice mix above.

* 1 lb Medium prawns
* 1 c White wine
* 1 1/2 tb Smooth peanut butter
* 2 tb Safflower oil
* 1 1/2 tb Light honey
* 2 tb Low-sodium soy or tamari -sauce
* 2 ts Rice vinegar
* 1/2 ts Dark sesame oil
* 1/2 ts Cayenne pepper
* 1 tb Green onion; minced
* 1 1/2 ts Ground coriander
* 1/2 ts Ground cumin
* 4 c Steamed rice; (optional)

Indonesian Food Recipes Instructions
1. Wash prawns, peel, and devein. Place in a large saucepan with wine. Cook over medium-high heat until they turn bright pink. Set aside.

2. In a small bowl mix together peanut butter and safflower oil until smooth. Add honey, soy sauce, vinegar, sesame oil, cayenne, green onion, coriander, and cumin. Mix well, then add prawns. Place prawns and sauce in saucepan and reheat. Serve over steamed rice (if desired).

Process shallots, garlic, ginger, chiles, coriander, turmeric, salt and 1/2 cup of water to a smooth sauce. Marinate beef for 1/2 hour.
Heat the oil: add the beef and marinade, the salam, laos, lemon grass and lemon; stir-fry over moderate heat for 5 minutes. Add remaining water, cover and cook until beef is tender, about 1 hour.
If the sauce evaporates too quickly, add another 1/2 cup water and continue to simmer. Serve warm...nice ! Enjoy it !

* 1 3/4 lb Lamb, fresh
* 2 Onion
* 3 Thai chile
* Ginger, fresh; 3/4" knob
* Lemon grass root, 1/2" knob
* 1 Lemon grass, stem
* 2 Garlic clove
* 8 Macadamia nut
* 2 Tomato, ripe
* 1/3 c Oil
* 1/2 ts Cardamom, ground
* 1/2 ts Cumin powder
* 1/2 ts Turmeric
* 1/4 ts Fennel powder
* 1 Cinnamon stick; 2"
* 4 Cloves, whole
* Salt; to taste
* Pepper, black; to taste
* 4 c Coconut milk

Indonesian Food Recipe Instructions:
Cut the lamb into bite-size chunks. Chop the onions, chiles, ginger, lemon root and lemon grass. Crush the garlic and grind the macadamia nuts. Skin the tomatoes and cut the flesh into small dice. Heat the oil in a large pan, add the onion, chiles and garlic and saute until the onion becomes translucent.
Then add the lamb, ginger, lemon root, lemon grass and tomato and cook for another three minutes, stirring frequently. Add the spice powders, cinnamon stick and cloves and season to taste with salt and pepper. Pour in the coconut milk and bring to the boil, stirring constantly, then lower heat and allow to simmer until the meat is very tender; approximately 45 minutes. Ingredients

* 1/2 Piece fresh ginger, sliced
* 1 sm Onion, sliced
* 1 Or 2 fresh, hot red -chilies, seeded, sliced
* 1/2 ts Salt
* 1/4 ts Sugar
* 1/4 ts Turmeric
* 2 c Coconut milk
* 1 Whole red snapper or -similar fish, about 1 pound
* 1 sl Laos [Galangal S.C.]
* 2 Stalks lemon grass or two -slices lemon
* 1/4 lb Spinach or Swiss chard, -coarsely chopped

INSTRUCTIONS
Process the ginger, onion, chili, salt, sugar, turmeric and 1/4 cup of the coocnut milk into a smooth paste. Set aside Grill fish over charcoal or in a gas or electric broiler for 2 minutes on each side.
Put the remaining coconut milk and the spice paste in a large skillet and bring to a boil over moderate heat. Add the laos and lemon grass and simmer for 5 minutes, stirring frequently. Add the fish and greens, cook for 15 minutes basting occasionally. Serve warm.

DIPPING SAUCE
1/2 c Peanut butter
* 1/2 c Water
* 1 tb Brown sugar; packed
* 1 tb Lemon juice
* 1/2 ts Salt
* 1/2 ts Red pepper sauce
* 1 sm Garlic clove; crushed

SHRIMP
* 1 1/2 lb Shrimp; peeled
* 2 tb Vegetable oil
* 2 tb Water
* 1 tb Lemon juice
* 1 ts Brown sugar; packed
* 1/2 ts Salt
* 1/2 ts Red pepper suace
* 2 Garlic cloves; crushed

INSTRUCTIONS
Prepare dipping sauce by mixing all ingredients until smooth. Cover until serving time. Make a shallow cut lengthwise down back of shrimp; wash out vein. Mix remaining ingredients in medium glass bowl. Add shrimp; stir to coat with marinade. Cover and refrigerate at least 1 hour. Remove shrimp from marinade; reserve marinade.
Thread shrimp on 6, 15" metal skewers, leaving space between each.
Cover and grill shrimp about 4" from medium coals, 10-20 minutes, turning and brushing 2-3 times with marinade, until shrimp are pink.

* 2 Cornish game hens, about 1 -1/3 pounds each
* 4 Shallots sliced
* 2 Garlic cloves, sliced
* 1 tb Ground coriander
* 3 To 7 fresh hot red chiles, -seeded, sliced
* 1/2 Piece fresh ginger, sliced
* 1/4 ts Ground turmeric
* Salt to taste
* 2 tb Lime juice
* 2 c Coconut milk
* 2 Stalks lemon grass or 1 -slice lemon

INSTRUCTIONS
Split open the game hens from the breast side and flatten them out into a butterfly shape. Discard loose skin and fat. Broil the hens for 3 minutes on each side.
Process the shallots, garlic, coriander, chile, ginger, turmeric, salt, lime juice and 1/2 cup of the coconut milk to a smooth sauce.
Marinate the hens in the sauce for 15 minutes.
Put the hens in a large skillet and cook over moderate heat for 10 minutes uncovered. Then add the remaining coconut milk and the lemon grass. Bring to a boil and cook for 30 minutes, basting
occasionally, until the hens are tender and almost all the liquid has evaporated.

* 1 tb Clear soya sauce
* A pinch of chilli powder
* 1 ts Ground ginger
* 1 ts Ground coriander
* 1 Clove garlic, crushed
* A pinch of turmeric

INSTRUCTIONS
The name means simply 'fried chicken', and that is all it is. The marinade, however, gives it a characteristically Indonesian flavour.
Marinate the pieces of chicken in this mixture for 2 hours, turning them from time to time. Strain the chicken, so that the marinade drips away from it. Then deep-fry the portions, 4 or 5 at a time.

Ingredients:

  • 500 gr Mackerel
  • Salt
  • 2 Onions
  • 1 tablespoon Sambal Ulek
  • 1 stalk lemongrass
  • 1 teaspoon trassi
  • 1 slice galangal
  • 400 ml (one tin) Coconut milk
  • 1-2 laurel leaves
  • 1 Daun jeruk purut
  • Oil
INSTRUCTIONS

Season the fish and fry on both sides in the oil to a golden colour.
Don't overcook, the fish must remain firm. set aside.
Using a mortar & pestle or food processor, make a paste from the onions, sambal, lemongrass, trassi and galangal. Add the coconut milk and, on a low flame, reduced the sauce to about halve its volume . place the fish in the sauce and add the laurel and jeruk purut leaves and simmer for a few more minutes. Ingredients:
  • 500 gr Cod fillets
  • 2 Onions
  • 2 Cloves of Garlic
  • 2 Red Peppers
  • 3 Tbs. Tomato puree
  • 1 Tbs. Kecap Manis
  • 150 cc. Water
  • 3 Tbs. Oil
  • flour to coat fish
  • oil for fryer

    Spices (Boemboes):
  • 2 Lime leaves
  • 2 Bay leaves
  • 1 cm. Galangal
  • 1 cm. Ginger root
  • ½ tsp. Trassi
  • 2 tsp. Sugar
  • 1 stalk Lemongrass
Instructions:

Divide the fish into four fillets. Coat with the flour and deep fry until golden brown. Set aside. De-seed peppers and slice thinly. Chop onions and garlic.
Heat oil in wok than add peppers, onions and garlic and stirfry for 4 mins.
Grate galangal and ginger root. Add all the boemboe spices to wok and fry for a further 2 mins. add remaining ingredients and the fish and simmer for 10 mins. Make sure the fish remains whole.Remove leaves and the Indonesian food recipe of ikan boemboe Bali is ready to serve.

Ingredients:
  • ½ Green Cabbage
  • 1 tbs Curry powder
  • 1 strand Lemon grass
  • Pepper and Salt
  • 2 fresh Mackerels
  • 4 tbs Oil
  • 6 diced Onions
  • 4 Red Pepper, sliced
  • 2 cloves Garlic, crushed
  • 1 tsp Sambal Ulek
  • 2 Lime leaves
  • 2 Bay leaves
  • 2 Curry leaves
  • 3 tbs Lemon juice
  • 1½ tbs Sugar
  • 2 tbs Kecap Manis
  • 2 cm Fresh Ginger, sliced
INSTRUCTIONS

Bring a pan with water to boiling point and add pepper, salt, curry and lemon grass. Add the whole Cabbage leaves and boil for about 2 min. Drain and remove hard centre. Arrange half the leaves on the bottom of ovenproof dish.
Clean the fish,cut length wise, fold open and remove bones. Arrange fish, with skin on the underside, over the cabbage. Heat oil and fry Onions, garlic and peppers for 5 min. Add remaining ingredients and fry for a further 5 minutes.
Spread mixture over fish and cover with remaining cabbage leaves.
Place the fish in your steaming basket and fit closely over a wok or saucepan with boiling water, making sure no steam can escape on the side of the basket. Check the level of your water regulary. Steam for 30 minutes.
Alternatively cook the fish in an ovendish covered with tin foil and placed in centre of oven. Cook for about 30 minutes at 180 C . The Indonesian food recipe is ready to serve....great !
