Indonesian Food Recipe : Mixed Spicy Chicken
(Ayam Bumbu Rujak)

Indonesian Food Recipe Ingredients
* 3½ lb. young chicken, cut
* into frying pieces
* ¼ cup sliced shallots 3 cloves garlic, sliced
* 2 tsp. crushed dried red hot chili
* 5 candlenut, crushed
* 1/8 tsp. turmeric
* 1 tsp. salt
* 1 tsp. sugar
* 2 cups coconut milk
* 1 Tbs. Vegetable oil
* 1 thick slice ginger
* 1 stalk lemon grass

Indonesian Food Recipe Instructions
Blend the shallots, garlic, chili, candlenut, salt and sugar with ¼ cup of the coconut milk into a paste.
Heat the oil in a wok and sauté the paste for a minute or two until you can smell the aroma.
Place the chicken, ginger and lemon grass into the wok and stir fry for five minutes or more over medium heat.
Then add the rest of the coconut milk, and let it cook for forty five minutes, stir the chicken frequently.
It is ready to be served if the sauce is somewhat thickened and the chicken should be tender.
The Indonesian food recipe of spicy chicken is ready to serve 4-6 persons. Enjoy it !

(Peanut Chicken)

1 md Onions, sliced (1/2 cup)
2 Garlic cloves, sliced
* 1/2 Piece fresh ginger, sliced 4 Or 5 fresh, hot red chiles, -seeded, sliced
* 1/8 ts Ground pepper
* 1/8 ts Turmeric
* 1 ts Salt or to taste
* 2 c Coconut milk
* 1 Salam leaf
* 1 sl Laos
* 1 (3-pound) chicken, cut into -8 pieces, discard loose -skin and fat
* 1/3 c Dry roasted peanuts

Indonesian Food Recipes Instructions
First of all process onion, garlic, ginger chile, pepper, turmeric, salt and 1/4 cup coconut milk to a smooth paste. Put the rest of the coconut milk in a pan with the spice paste and bring to a boil over moderate heat. Add salam, laos, chicken and peanuts and continue to cook, uncovered, over low heat for 30 to 40 minutes, basing frequently, until almost all the liquid has evaporated. Serve warm...enjoy the peanut chicken..!

or SATE.... Try this fabulous Indonesian food recipe ...great with nasi goreng or Indonesian fried rice.

Indonesian Food Recipes Ingredients
For the Sate's:
  • 500 gr. of Beef, Pork or Chicken
For the marinade:
  • 1 Onion
  • 1 Garlic clove
  • 30 ml Kecap Manis
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cummin powder
  • 1 stalk Lemon Grass (crushed)
  • 1 teaspoon Sambal Ulek
  • 1 glass red wine (optional)
  • 30 ml water

Dice the meat in to 2 cm square cubes and put onto bamboo skewers(about 4 per stick).
Combine all the marinade ingredients , except the lemon grass, into a food processor and make into a smooth paste. Poor this over the prepared sate's, add the lemon grass, and leave to marinade for at least 2 hours.
Cook the sate's on the barbecue or under the grill for 5 -10 min. until done and serve with Sate dip or hot Peanut Sauce. Or soy sauce mixed with green chili with red onions cut. The Indonesian food recipe of sate is ready ...enjoy the feasts ! Great one !

Indonesian Potato and Beef Perkedel

* 2 lb Baking potatoes, boiled and -mashed
* 1 1/2 ts Salt
* 1/2 ts Freshly ground pepper
* 2 ts Ground coriander
* 1/8 ts Nutmeg
* 1/4 c Chopped parsley leaves
* 1 lg Egg
* 2 tb Peanut oil, plus more for -deep frying
* 4 Shallots, finely chopped
* 2 Garlic cloves, minced
* 1/2 lb Lean ground beef.

In Indonesia, these fritters are served as part of a rijstaffel (rice-table) or as a side dish to embellish a main course. You will find they work well as a delicious appetizer for a Western meal.
Mix together the mashed potatoes, 1 teaspoon of the salt, half the pepper, the coriander, nutmeg, parsley and egg.
Preheat a wok until hot. Add 2 tablespoons of the oil, the shallots and garlic; saute until soft. Add beef and stir to break up clumps; brown until meat is no longer red, about 2 minutes. Season with remaining salt and pepper. Cool.
Combine the meat with the potato mixture. Form into 16 balls and flatten them into cakes about 2 inches round by 1 inch thick. Set on a tray. Refrigerate, if not fried immediately.

Pour 2 inches of oil into a preheated wok. Heat to 365F. Add 4 or 5 cakes, or as many as will fit into the pan without crowding or reducing the temperature of the oil. Deep fry, turning occasionally until golden brown, about 3 minutes. (If preferred, the cakes may be pan-fried in a flat skillet.) Remove to paper towels to drain. Serve hot or at room temperature.

* 1 1/2 Lb, cleaned weight fish

* 6 Shallots or 1 lg Onion

* 2 Cloves garlic

* 2 ts Ground coriander

* 1 ts Ground ginger

* 1/2 ts Powdered lemon grass or 1 Blade fresh, lemon grass

* 1 ts Chilli powder

* 1 Salam leaf or bay-leaf

* 1/2 ts Turmeric

* 1/2 c Tamarind water

* 1 c Of thick santen (coconut -milk)

* 2 tb Vegetable oil

* Salt

* sl Cucumber

* Mint



Indonesian Food Recipe Instructions.

It is better to select a white fish with firm flesh, such as haddock, angler-fish, swordfish or dogfish. In Australia the various fish known as whiting would be a good choice. Americans might like to use snappers.

Whatever fish is used, it can be cut into small cubes or slices before frying. Heat a little oil in a heavy frying-pan, and carefully brown the fish in it. Meanwhile, in another frying-pan,

fry the chopped shallots (or onion) and garlic until tender.

Stir in the chilli, ginger, turmeric, coriander, lemon grass, salam, salt and tamarind water. Let this mixture simmer for 10 minutes, then put in the fish. Cover, and simmer for another 10 minutes.

Add the santen and cook for a further 5 minutes. Serve hot, garnished with very thin slices of cucumber and chopped mint.

(Alternatively, put the cucumber and mint into the kare itself for the last 2 minutes of cooking.) Incidentally, the same kare can be made with prawns. There is no need to fry the prawns separately; but fry them in the mixture of onion, etcetera for a few minutes before

you put in the tamarind water. Makes 4 servings.

Indonesian Food Recipe Ingredients



* 1 Fish, about 650-900g dressed Weight. Preferably sea bass or Mackerel

* 1 t Salt

* Oil, for deep frying

* 2 T Margarine or oil

* 2 sm Onions, sliced

* 1 t Sambal Oelek

* 1/2 t Laos

* 1/2 t Lemon grass

* 3 T Tamarind juice

* Pinch of ground ginger

* 1 t Brown sugar

* 1 T Sweet soy sauce



Indonesian Food Recipe Instructions

Cut fish into serving portions and rub salt all over. Feep-fry and drain on absorbent paper.

Heat oil and saute sliced onions until lightly brown. Add sambal oelek, laos, lemon grass, tamarind juice, ginger, brown sugar and soy sauce. Heat thoroughly.

Place fried fish in deep serving dish and pour sauce over it. Serve the Ikan Bali with rice...nice ! Enjoy it !

Bakmi Goreng

or Fried egg noodles.

A great Indonesian food recipe ....traditionally nice !



Indonesian Food Recipe Ingredients:

  • 350 gr. Medium Egg noodles
  • 100 gr. Diced Pork Fillet
  • 50 gr. Small Prawns
  • 1 medium Onion
  • 2 Cloves of Garlic
  • 1 Carrot
  • 1 Small Leek
  • 2 tsp. Sambal ulek
  • 1 tsp. Trassi (shrimp paste)
  • 3 tbs. Kecap Manis (soy sauce)

  • 3 tbs. Oil
  • Pepper & Salt
INDONESIAN FOOD RECIPE INSTRUCTIONS:



Boil the noodles, using the instructions on the packet. Rinse and set aside.

Heat your wok and add the oil. Stir-fry the diced Onion and Garlic for 1 min. Add the meat, prawns, trassi and sambal ulek and fry for a further 3 min.Add the finely sliced carrots and leek and fry for 4 more min. Add the Noodles and Kecap Manis.

Use pepper and salt as needed and stir-fry for a further 4 min.
